Festively Fresh Pulled Jackfruit + Quinoa Goodness

Who doesn’t adore easily established, nutritionally balanced and delicious salads? I possess a fond passion for salads, especially throughout the Summer season, where one feels like something delicious and healthy!

This jackfruit salad is easy and efficient to assemble, taking a total of twenty five to thirty minutes out of your day or evening. Time restrictions and pressures can leave us feeling utterly drained, exhausted and unwilling to make a meal at the conclusion of one day. Therefore, this salad provides you with enough time to delight in mindfully creating and consuming the flavours.

This salad has a somewhat Mexican theme, due to the colours and use of certain ingredients, such as corn, spinach, avocado and spices. Delicious!

The ingredients used are all plant based and delicate on the digestive system. Each provide one with a source of nutrients required to ensure one’s dietary intake reaches the appropriate dietary components for the day.

Quinoa – this tiny grain is high in an abundance of nutrients and is subsequently termed a “superfood”. I love the nutty flavour this grain has to offer. It can be utilised in both savoury or sweet dishes, allowing one to feel satiated and satisfied. Positively, it is gluten free so allows one’s digestive system to be comforted. Goodbye discomfort and pain!! Quinoa is also a complete protein source, which means that it provides one with all essential amino acids which are crucial for building and maintaining muscle, which is important throughout the life span. Add this grain into your diet and be blissfully surprised with all health benefits and deliciousness it has to offer.

Black Beans – are a fantastic source of plant based protein to implement into one’s diet, especially if one has selected to pursue a vegetarian or vegan lifestyle. These beans are affordable, consist of both soluble and insoluble fibre which is necessary for regular and healthy bowel movements (a contented digestion promotes a happier you!) and are a beneficial source of improving one’s health. They are nutrient dense and will keep you feeling satiated. Add them to salads, baking or eat in their original form. They can be purchased dry or canned. Be certain to prepare the dried beans appropriately to ensure you receive the maximum benefits.

Jackfruit – a deliciously, tropical and sweet fruit, is a fantastic alternative to meat in any plant based salad, tacos or dish you create. Jackfruit has, despite being present for numerous years, recently gained popularity due to being a bountiful source of protein, is easy to digest, high in dietary fibre to cleanse and promote healthy bowel function, consistent of minerals and antioxidants such as vitamin A, C and B compounds as well as being a source of potassium, magnesium, iron and manganese all required to support bodily functions. Jackfruit is a versatile gem in the fruit realm which is not to be neglected!

Spinach – this leafy green is an abundant source of minerals, vitamins and nutritionally required compounds to promote optimal health. Spinach contains fibre, so is easy to digest and is host to antioxidants to neutralise any free radicals in the stomach, due to the consumption of sugary or processed foods.

Avocado – one of my favourite natural fats (and fruit)!! This creamy, green and delicious pear shaped fruit, is plentiful in vitamins and minerals and is considered a superfood. Avocados are a phenomenal source of dietary fibre and mono-saturated fats which maintain regular weight and bodily functions. Add avocados to your salads, smoothies, toast, crumpets or eat as it is with salt and pepper. You shall not be disappointed!

Spice / Flavourings – all spices and flavourings used in this dish, enhance the flavours of all of the core ingredients, to establish an infusion of diversity and richness. The cinnamon and apple cider vinegar in particular, have been shown to promote an anti-inflammatory response to soothe the stomach.

Preparation: 25 – 30 minutes

Serves: 1

Ingredients:

– 1/2 cup Quinoa

– 1/4 can of Jackfruit

– 1/4 white Onion diced

– 1 tsp Oil

– 1/4 can of Black Beans

– 1/4 cup of Sweet Corn

– Handful of Spinach

– 4 Tomatoes diced

– 1 tsp Apple Cider Vinegar

– 2 tbsp Water

– 1 tsp Tomato Paste

– Chilli Flakes (to your preference)

– Dash of Cinnamon

– 1 tsp Paprika

– 1 tsp Cacao Powder

– 1/2 Avocado

Method:

– Heat oil in a saucepan and add the onion and jackfruit to soften.

– Once the Onions have browned and softened, add the tomato paste, cinnamon, cacao powder, chilli flakes, paprika, apple cider vinegar and water. Stir until all combined.

– Once combined, add the black beans, corn, spinach and tomatoes. Stir to mix all thoroughly.

– In another saucepan, add the quinoa and wait until all the water has been absorbed, until a fluffiness ensues.

– Once ready to eat, add the avocado and any other garnishes to your liking.

– Savour and then contentedly devour.

Possible garnishes:

– Avocado

– Bean sprouts

– Sauerkraut

– Gherkins

– Grated Carrot

– Buckwheat

– Mangoes

– Jalapeños
